Ingredients
- 1/2 cup coconut flour
- 1/2 cup sugar substitute (I use Erythritol)
- 1 tsp baking powder
- 1 package (.4 oz) sugar-free strawberry jello (sub orange, lemon, or lime to change the flavor of your cakies!)
- 3 eggs
- 1/2 cup melted butter
- 1/2 cup cream
- 1/4 cup sour cream
- 1/2 tsp vanilla extract
- Optional: Sugar free white chocolate chips
Instructions
Preheat oven to 350°. Sift or whisk together the first four ingredients. Add remaining ingredients, and blend until well combined. Spoon batter into a piping bag (or make your own by cutting one of the corners off a ziplock bag). Cover a baking sheet with parchment paper. Dispense batter in spiraling motions to form 1 1/2 inch circles. Leave 1 inch of space between each cakie. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean. Use melted sugar-free white chocolate chips to decorate cakies once cool.
