    • White Chicken Enchiladas

      Adapted from The Pioneer Woman’s “White Chicken Enchiladas”

      • 10 Mama Lupe’s Low-Carb Tortillas
      • 2-1/2 cups shredded cooked chicken
      • 2 cups chicken broth
      • 1 tablespoon olive oil
      • 1 onion minced
      • 1 fresh jalapeño, seeded and minced
      • 3 whole 4 oz cans diced green chilies, drained
      • 1 teaspoon paprika
      • 1/2 cup heavy cream
      • 2 TBSP butter
      • 8 oz. cream cheese
      • 1 tsp xanthan gum
      • 3 cups shredded monterey jack cheese
      • 1/4 tsp pepper
      • Optional garnish: low-carb salsa, sour cream, cilantro (not included in nutritional facts below)

      Instructions

      To make filling, mince onions and jalapeno in food processor or Ninja chopper and and saute with 2 cans green chillis for a few minutes, just until onion begins to brown. Add chicken, 1/2 cup chicken broth, cream, and paprika. Bring mixture to a light boil, stiring constantly, and remove from heat. To make sauce, melt butter and cream cheese in a medium saucepan, whisking constantly. Once softened, whisk in 1 1/2 cups chicken broth. Add remaining chilies and 1 1/2 cups grated cheese. Stir until cheese is melted and then whisk in pepper and xanthan gum. Fill each low-carb tortilla with 1/3 cup filling, roll, and place in a casserole dish (9×13 inch). Cover with sauce and top with remaining cheese. Bake at 350°F for 30 minutes. If desired top with 1 tablespoon salsa, cilantro leaves, and sour cream.

    • Bacon-Wrapped Water Chestnuts

      Ingredients:

      • 10 water chestnuts
      • 20 toothpicks
      • 10 slices of bacon
      • 1/4 cup soy sauce
      • 2 TBSP sugar substitute

      Instructions:

      Cut chestnuts in half. Wrap a half piece of bacon around each chestnut half, and insert a tooth pick to hold the bacon in place. Place chestnuts in a baking pan. Make a marinade of soy sauce and sugar substitute and pour over chestnuts. Let chill for 4 hours, basting marinade over bacon again halfway through. Broil for 10 minutes, or bake at 375°F until bacon reaches desired crispness, draining off excess grease after 15 minutes.

    • Chocolate Cherry Cake

      Ingredients:

      Cherry layers
      • 1/2 cup coconut flour
      • 1/2 cup Erythritol
      • 1 tsp baking powder
      • 1 package (.4 oz) sugar-free black-cherry jello
      • 1/3 cup no-sugar added cherry pie filling, chopped into small pieces in food processor
      • 3 eggs
      • 1/2 cup melted butter
      • 1/2 cup heavy whipping cream
      • 1/4 cup sour cream
      • 1/2 tsp vanilla extract
      Chocolate Layer
      • 2 egg
      • 1/4 cup heavy whipping cream
      • 1/4 cup melted butter
      • 2 TBSP flax meal
      • 2 TBSP almond flour
      • 1/4 cup cocoa powder
      • 1/2 cup Erythritol
      • 1 tsp baking powder
      • 1 tsp vanilla extract
      • 1 tsp red wine vinegar
      Toppings
      • 2 cups heavy whipping cream
      • 2 cups sugar substitute
      • 2 tsp vanilla extract
      • 20 sugar-free Cherry Life Savers
      • 1/3 cup Bake Believe dark chocolate chips

      Instructions:

      Preheat oven to 350°. Line 2 6-inch cake pans with parchment paper. Spray with PAM and flour the sides of the pans with a little extra almond flour or coconut flour.

      To make the cherry cake, mix together the first four ingredients in a mixing bowl. Add remaining ingredients, and mix until well combined. Spoon batter into prepared pan, and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cakes cool in pan before carefully removing and storing in a refrigerator until decorated.

      Make chocolate layer by combining all wet ingredients and Erythritol in mixing bowl. Add in dry ingredients and mix. Pour batter into prepared pan and bake for 25-30 minutes, or until tooth pick inserted in the center comes out clean. Let cakes cool in pan before carefully removing and storing in a refrigerator until decorated.

      Add heavy whipping cream, sugar substitute, and vanilla to mixer and whip until stiff peaks form, then whip a minute more. Vanilla Cream Topping should be thicker than whipped cream but not as thick as butter. Store in refrigerator until ready to use. Grease a small plate with spray Pam. In microwave safe bowl, melt cherry lifesavers until bubbling and carefully pour onto prepared plate. Freeze until firm and cool. Use a metal metal spatula to remove candy from plate, than break into pieces with hands. Process chocolate chips until it is 50/50 small pieces and chocolate powder.

      Carefully slice the cherry cake into two layers. Place first layer of cherry cake and top with a layer of vanilla cream topping, add chocolate layer and top with more vanilla cream topping, place last layer of cake and ice cake with remaining topping. Sprinkle chocolate pieces over the top of the cake. Top with candy shards. Slice and serve!

      Ingredients:

      MEATBALLS
      • 2 lbs ground beef
      • 1/2 cup almond flour
      • 1/4 cup heavy whipping cream
      • 1 beaten egg
      • 1/2 cup minced fresh onion
      • 1 tsp minced fresh garlic
      • 1/4 tsp pepper
      • 1 tsp salt
      • 1 tablespoon chili powder

      Adapted from BBQ Glazed Meatballs

      BBQ SAUCE
      • 2 cups tomato paste
      • 2 cups apple cider vinegar
      • 2 cups Erythritol
      • 1 tbsp Worcestershire sauce
      • 2 tsp liquid smoke
      • 2 tsp smoked paprika
      • 2 tsp salt
      • 3 tsp black pepper
      • 2 tsp garlic powder
      • 1/2 tsp cayenne pepper
      • 2 tsp onion powder

      Adapted from Cooking LSL Keto BBQ Sauce

      Instructions:

      Preheat oven to 350°F. Add beef, whipping cream, almond flour, egg and seasoning to a mixing bowl and mix until well incorporated. Mix in onions. Form the meet into 2 inch balls, and place in a glass baking dish (15″x10″). Make sauce by blending all remaining ingredients in food processor and until smooth. Pour sauce over meatballs and bake for 1 hour (until meatballs reach an internal temp of 160 degrees).

    • Olive Cheese Balls

      Ingredients:

      • 2 cups shredded cheddar cheese
      • 1 cube melted butter
      • 1/4 cup coconut flour
      • 1 1/2 cup almond flour
      • 42 green olives olives

      Instructions:

      Preheat oven to 400°F. Line a baking sheet with parchment. In a mixing bowl, combine cheddar cheese, coconut flour, and almond flour. Stir in melted butter. Fill a small cookie scoop halfway full with dough, insert an olive in the center, and just cover with more dough. Dispense on prepared cookie sheet. Bake for 20 minutes, until lightly golden.
