    • Mini Strawberry Cake Stacks

      Ingredients:

      Cherry Cake
      • 1/2 cup coconut flour
      • 1/2 cup Erythritol
      • 1 package (.4 oz) sugar-free strawberry jello
      • 3 eggs, separated
      • 1/2 cup vegetable oil
      • 1 tbsp heavy whipping cream
      • 1 tsp vanilla extract
      Whipped Cream Filling
      • 1 cup heavy whipping cream
      • 1 tsp vanilla extract
      • 1/2 cup of erythritol or to taste
      • 1/2 tsp gelatin
      Strawberry Filling
      • 4 tbsp Smucker’s Strawberry Sugar Free Preserves or other low-carb strawberry jelly
      • 1/3 cup water
      • 1/4 cup erythritol
      • 1/2 tsp xanthan gum

      Optional: Powdered erythritol for dusting

      Instructions:

      Preheat oven to 400° F. Line a 9×13 cake pans with parchment paper.

      To make the the strawberry layer, mix together egg yolks, erythritol, vanilla, and strawberry jello. Mix in oil and coconut flour. In a clean mixing bowl, beat egg whites until stiff peaks form. Mix half of the egg whites into cake batter, then fold in the rest. Spoon batter into prepared pan, and bake for 30-35 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean or crumby. Let cakes cool in pan before cutting. Cut into 16 rectangles and refrigerate until ready to assemble.

      Make jelly filling by heating up jam, water, and erythritol in a small saucepan on high heat, stirring constantly until erythritol is dissolved. Slowly add xanthan gum, and whisk until combined. Remove from heat and let sit while preparing whipped cream filling.

      Add heavy whipping cream, gelatin, sugar substitute, and vanilla to mixer and whip until stiff peaks form, then whip a minute more. Filling should be thicker than whipped cream but not as thick as butter. Store in refrigerator until ready to use.

      Fill one pipping bag with cream filling and another with jelly filling. Pipe a layer of jelly filling on 8 rectangle cakes, then add whipped cream filling. Carefully top with another layer of cake. Decorate the top of each cake stack with more whipped cream or a dusting of powdered erythritol.

    • Chocolate Orange Breakfast Bars

      Ingredients:

      • 1 cup flax meal
      • 2/3 cup almond flour
      • 1 package Sweet Logic/Primal Noms Orange Almond Mug Cake mix (Use code MOOSE10 for 10% off order)
      • 1/2 cup and 3 tbsp erythritol
      • 1 eggs
      • 1 cup coconut oil
      • 1 tsp vanilla extract
      • 3 tbsp grated orange peel
      • 1 cup sugar-free dark chocolate chips (Bake Believe)
      • 1/4 cup butter

      Instructions:

      Preheat oven to 350°F. Grease a 9x13in baking pan. Combine dry ingredients in mixing bowl. Mix in egg melted coconut oil, 2 tbsp orange peel, and vanilla. Mix until thoroughly combined. Press dough into prepared pan. Bake for 45-60 minutes. The surface of the bars should be golden brown, and a toothpick inserted in the center should come out clean. Let cool completely before coating with chocolate ganache. To make ganache, melt butter and chocolate chips in a saucepan over low heat stirring constantly or in a microwave stirring every fifteen seconds. When melted and glossy, spread chocolate over the cookie bars. Mix remaining orange peel and erythritol together, and sprinkle over cookie bars.

    • California Poorboy Wrap (Air Fryer)

      Ingredients:

      • 1/2 Cut Da Carb flat bread
      • 2 thin slices hard salami
      • 2 thin slices of ham
      • 1 slice American cheese, cut in half
      • 1/2 slice Swiss cheese
      • 2 tbsp mayonnaise
      • 2 tbsp butter
      • Optional mustard or yellow peppers

      Instructions:

      Spread butter over one side of flat bread and flip over, so that the buttered side will be on the outside of the wrap once rolled up. Spread mayonnaise evenly over the wrap. Layer slices of American cheese, lunch meat, and Swiss cheese on flat bread and roll up. Line the bottom of your air fryer basket with perforated parchment. Roll up the wrap, and place in air fryer seam side down, so that it doesn’t unroll while frying. Fry according to air fryer instructions at 400 degrees for 5 minutes, flip wrap and cook another 5 minutes or until wrap is golden brown and crispy. Let cool slightly. Serve with mustard and spicy yellow peppers.

    • Fried Egg Cheese-wich (Egg Fast Friendly)

      Ingredients

      • 2 eggs
      • 1 tbsp mayonnaise
      • 2 tsp mustard
      • 2 slices cheddar cheese
      • Oil or butter for frying
      • Salt and pepper to taste.

      Instructions:

      In medium non-stick frying pan, crack two eggs in a couple tablespoons of hot oil or butter. Use a fork to break the yolks before flipping and frying the other side of the eggs. Salt and pepper each side and remove from pan. Fry too slices of cheese until the edges are golden brown. Flip and cook for 10 more seconds. Remove from pan. Cheese should be firm and flexible when hot, but will crisp up as it cools. Spread mayonnaise and mustard on cheese crisps. Sandwich the warm fried eggs between the two cheese crisps and serve.

      BHB and the Keto Diet

      According to WebMD, “Beta-hydroxybutyrate is a chemical that is made by the body to provide energy in times when not enough carbohydrates or sugars have been eaten… Beta-hydroxybutyrate seems to help nerves and the brain to work better. Beta-hydroxybutyrate might be used as energy by muscles in the body to improve excercise ability.” It has become increasingly popular in the keto diet community to take BHB, one of the three ketones your body can produce naturally from fat stores, in supplement form. The hope is that taking exogenous ketones will encourage the body to enter ketosis, promote weightloss, decrease appetite, and increase energy. Instagram feeds are full of posts boasting the benefits of exogenous ketone supplements, but skeptics such as Healthline nutritionists have their concerns. In their article Do Exogenous Ketone Supplements Work For Weightloss?, Gavin Van De Walle warns “In other words, the higher your blood ketone levels are, the less your body produces. As a result, taking ketone supplements may prevent body fat from being used as fuel, at least in the short term.” Still I wanted to try it myself, and having recently hit a platau in my weightloss, I jumped at the chance to try Keppi Nutrition’s BHB Ketone Supplement. Keppi was generous enough to send me two flavors of their supplement in exchange for an honest review.

      Taste and Nutrition

      Keppi Nutrition BHB Supplement is made with natural ingredients and is free of fillers, carbs and sugars. Of the two flavors I tried, Lemon Lime and Chocolate, Lemon Lime was my absolute favorite. It tastes like a margarita, which I totally miss drinking on keto! I wasn’t sure what I thought about the saltiness of the Chocolate flavor, but if you enjoy a sweet and salty combo, this flavor might be right up your alley. The powder dissolved pretty easily in a glass of water, and there was minimal remaining powder in the bottom of my glass after I finished drinking it.

      Ketosis and Weightloss

      I did not notice any substantial weight loss while taking this supplement. I did notice that on days that I drank exogenous ketones, I was pleased to see my pee strips were darker than ever, which indicates a higher level of ketones. I noticed the same results even after a carb heavy cheat meal. Its impossible to tell whether the supplement was encouraging my body to produce more ketones, or if the pee strip was picking up on the exogenous ketones alone.

      Appetite and Energy

      While drinking these ketones didn’t make me feel particularly energetic, I did notice it really helped curb my appetite. I recently started intermittent fasting, and nothing has helped me meet my daily fasting goals as much as Keppi Nutrition BHBs. When hunger strikes, I mix up a glass of cold Lemon Lime ketones and feel so much better. I always add a scoop of it to my water bottle to sip on at work, and it keeps me feeling satiated until my lunch break.

      Overall Impression

      While, I was a little disappointed that this product did not dramatically increase my weight loss, its use as an appetite suppressant really saved this product in my opinion. If this product fit into my budget, I would definitely be tempted to drink this regularly to curb hunger when fasting. Although, I would want to do some more research on the impact of exogenous ketones and their effect on the body’s ketone production, since pee strips are no longer a reliable test.
